Why is Buddha Fat Sometimes and Skinny Others?

I hate to sound ignorant, because I am not trying to offend anyone, but I was just wondering why is Buddha fat in some statues, like the ones I see in Chinese Restaurants, and Skinny when I see statues of southeast asia? Are these different phases of his life? I know nothing really about buddhism.

The little fat guy is not a representation of Buddha. His name was P’utai and he was a Chan(Chinese Zen) Buddhist monk. He is often depicted as being fat and happy because even though he lived an ascetic lifestyle he found freedom through the teachings of Buddha.
